Guest chef Tyler Shedden of Chase Hospitality Group and Fogo Island Fish present the humble fish that changed the world
Chef Tyler Shedden, Culinary Director of Chase Hospitality Group—known for Toronto’s foremost seafood restaurants, The Chase and The Chase Fish and Oyster, as well as Collette Grand Café, Kasa Moto and Planta—collaborates with Fogo Island Inn’s Kitchen Collective and fishers from the community to bring guests a taste of the plumpest, freshest fish to ever grace their plates. Cod brought the first settlers to Fogo Island centuries ago, and in addition to sustaining the Island’s people and their economy, it was historically traded for foreign goods such as rum and spices. On this weekend honouring the feisty and noble creature, guests may go to sea on a boat excursion to fish for cod by hand line, dine on cod prepared several different ways, and join in a compelling Q+A session with Chef Shedden, Tony Cobb of Fogo Island Fish, and local fishers who have returned to traditional hand-line fishing methods.
